CHEESY RICE BALLS

Ingredients 

2 cups precooked super rice

1/4 cup of mozzarella cheese, shredded

1/2 egg

2 tbsp. of flour (if the rice is not holding together)

2 tbsp. chopped cot meal

1 tsp chopped Spring Onions

-Small dice of red bell pepper

-1/2 small diced onion 

1/4 tsp of ground turmeric 

A dash of cayenne pepper(optional)

Salt and pepper to taste


For breading

1 cup all-purpose flour

-2 eggs beaten

2 cups breadcrumbs (preferably Italian seasoned)

Oil for frying (vegetable or olive oil)


Method

1. In a large mixing bowl, combine the cooked super rice, shredded mozzarella cheese, chopped cotmeal,turmeric, egg, belle pepper, onion, salt, and pepper. Mix well until all ingredients are evenly combined.

2. Use your hands to form small balls (about 1 to 1.5 inches in diameter) from the rice mixture. Press each ball firmly to ensure they hold their shape.

3. Set up a dredging station with flour in one shallow dish, the beaten egg in another, and breadcrumbs in a third dish.

4. Roll each rice ball in flour, shaking off any excess. Dip it into the beaten egg, then coat it in breadcrumbs, ensuring they are completely covered.

5. Heat your oil on medium heat, and dep fry the rice balls a few at a time to not overcrowd the oil.

6.Using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

8. Serve warm with marinara sauce or your favorite dipping sauce.
